The Review:
Growing up near Delafield, I remember Delafield as.... well, not much. These days, it’s turned into something else entirely—boutique shops, trendy restaurants, and now even a Voodoo Brewing Company. This Pennsylvania-based brewpub chain has been expanding into new territory, and their Delafield location opened earlier this year. While I was certainly excited to try their beers, I was more excited about their wings! Just a few weeks ago they started a Thursday night wing special, and as their social media post said it will "change the way you think about wings." Bold claim, we had to check this out!
As noted, Thursday is wing night at Voodoo Brewing, and at 75 cents per wing, it’s a big drop from their regular $16-for-eight price. In 2025, that’s a deal worth celebrating. The wings here are marinated, roasted, and then flash-fried, a process that gives them a distinct flavor and appearance. The roasting turns them a deep, dark brown, and whatever that marinade is, it works. The flavor carries all the way through the meat, not just on the surface. Also, these were super meaty wings, no scrawny wings here, certainly worth the $0.75 Thursday night price tag. Sometimes I actually don't care for overly large wings as they can have too much cartilage and other less than desirable traits, but these wings did not suffer from that issue at all. My only critique to the chicken itself is texture. The flash fry doesn’t crisp them up quite as much as I tend to like, so you trade crispiness for tenderness and roasted flavor. Otherwise, the chicken was juicy, flavorful, and very delicious.
The Flavors
Voodoo's website only shows a few wing flavors, but they actually have way more than listed there. I also get the feeling that some of these flavors will change over time, but on our visit the flavors were: Truff Buff, Sweet Chili, Spicy BBQ, Vindaloo, Buffalo, Sriracha Ranch, Garlic Parm, Cajun Dry Rub, Dill Pickle Dry Rub, and Strawberry Ghost Reaper. We were able to sample many of the flavors, our notes and thoughts below:

Sweet Chili – On the mild side and a bit one-note. Sweet, sticky, and not much chili to speak of. Not bad, but not my favorite.
Spicy Barbecue – A smoky, slightly spicy, sticky-sweet BBQ. Solid flavor, well-balanced, Ross' favorite for the night.
Vindaloo – Easily one of the most unique flavors of the night. It’s inspired by Indian curry, rich with warm spices and savory depth. Not spicy-hot, but spice-forward and full of character.
Sriracha Ranch – One of my favorites of the night. That familiar sriracha sweetness and mild heat combined with a dusting of ranch seasoning made for a fantastic flavor combo. Sweet, tangy, and just a little creamy.
Garlic Parm – Excellent execution. More Parmesan-forward than garlic-heavy, but the creamy, buttery sauce with a sprinkle of fresh herbs gave it a refined touch. It’s like a fancy garlic parm.
Dill Pickle (Dry Rub) – Very herbaceous, loaded with dill flavor, though missing that briny vinegar tang that really makes a pickle pop. Tasty, but could use a splash of acidity to balance it out. Though I didn't do it, this dunked in some ranch would probably take this to the next level.
Buffalo – Classic, mild, and well-made, but its flavor got a bit overshadowed by the roasted marinade of the chicken, still a super tasty wing though.
Sweet Garlic Reaper – My personal favorite. A sweet, sticky base with an unmistakable Carolina Reaper kick that never crosses into painful territory. It’s got flavor first, heat second, a perfect balance that keeps you coming back for more. The aroma of this one makes you think it's way spicier than it is.

Conclusion: Service was friendly and quick, and the wings came out piping hot. Between the thoughtful preparation, bold variety, and that killer Thursday night deal, Voodoo Brewing Company absolutely earns a Certified Wing Joint rating. Voodoo Brewing brings creativity and quality to the table in a way that stands out. If you’re anywhere near Delafield on a Thursday night, grab a pint, order a dozen, and try out some very unique wings!
