The Review:
One of our ongoing missions here at Milwaukee Wings has been finding a truly great wing spot for a couple members of the wing crew who call Menomonee Falls home. We've found some decent options over the years, but nothing that's really made us stop searching. That search brought us to Schmidty's Bar & Grill on Lisbon Road. Technically it's Brookfield, but it's sitting right on the edge of Menomonee Falls, so we're counting it.
Located in the former Pistol Pete's building, Schmidty's has built a following as evident by the packed house on the Thursday we stopped in. Perhaps it was the $0.95 Thursday wing special, perhaps it was music bingo, or maybe something else entirely.
Wings are ordered in batches of ten, and you can split those ten wings between two sauces. Even better, you can choose whether you want them naked, breaded, or grilled which is always a nice touch as you have total control over your wings. As far as the wings themselves, they ranged from average-sized to downright massive. There were a few mixed in that bordered on jumbo territory, making that 95-cent price point feel like a pretty good value. On a non-special night, and order of 10 will run your $13.95. I ordered a mix of breaded and naked wings. The breaded version featured a thin, crunchy coating that added texture without overwhelming the chicken. The naked wings held up well too. A few wings could have benefited from a little extra crispness, but overall the chicken itself was excellent. What really stood out was the flavor of the chicken. Whether it's a brine, seasoning, or something else entirely, the meat had a rich, savory flavor that came through regardless of which sauce was on it. That's something we don't always see, and it definitely elevated the experience.
Schmitty's offers a diverse but not overwhelming sauce list: Mild, Hot, Mango Habanero, BBQ, Spicy BBQ, Thai Chili, Garlic Parmesan, Teriyaki, Old Bay Dry Rub, and Asian Szechuan. With our large crew putting in some large wing orders, I got to try a good chunk of their offerings:
Mild - This is your classic buffalo sauce. Tangy, buttery, and carrying just enough heat to remind you it's there. Nothing revolutionary, but exactly what you want from a traditional buffalo wing.

Hot - This one surprised me. Rather than simply being a hotter buffalo sauce, it leaned heavily into pepper flavor and heat. There wasn't much vinegar tang or buttery richness here. Instead, it delivered a straightforward punch of chili pepper flavor. It was definitely near the upper end of my personal comfort zone. I enjoyed the heat level, but found myself wishing there was a little more complexity behind it.
Mango Habanero - A solid sweet-heat wing. The sweetness hits first before the habanero slowly builds in the background. It wasn't overwhelmingly hot, but it brought enough pepper character to keep things interesting.
Spicy BBQ - This was probably the biggest surprise of the night. It's called Spicy BBQ, but if I had been blind tasting it, I'm not sure I would have identified it as barbecue at all. It leaned more toward a tangy sweet-and-sour profile with a surprisingly strong kick of heat. Good? Yes. Traditional barbecue? Not really.
Garlic Parmesan - One of my favorites. Heavy Parmesan flavor, creamy texture, plenty of garlicky goodness, and just the right amount of that funky cheese character that makes garlic parm so satisfying. A really well-executed version of the style.
Asian Szechuan
My favorite sauce of the night. Sweet and sticky with teriyaki-like qualities, but layered with warming spices and the distinctive tingling sensation that Szechuan peppercorns bring to the table. It balanced sweet, savory, and spiced extremely well. I'd happily order a full batch of these next time.

The Verdict:
The consensus around the table was certified wing joint. However, the biggest area for improvement was consistency. Some wings arrived beautifully coated in sauce while others looked like they barely made contact with it. A little more attention to saucing could make a noticeable difference. Still, the positives outweighed the negatives. The chicken was flavorful, the wings offered good value, and several sauces were genuinely enjoyable. The restaurant itself was packed during our visit. Music bingo was drawing a crowd, TVs were filled with games, and the atmosphere felt lively and welcoming. It's clear Schmitty's has found a following. Did we finally discover the ultimate wing destination for our Menomonee Falls crew members? Maybe not, but it's definitely one of the better options we've found in the area, and it's a place we'd happily revisit when the craving for wings strikes.
