The Review
The corner of 92nd and Howard has been home to neighborhood bars for decades. Most recently it was First Choice Bar & Restaurant, but in early 2025 the building received a complete overhaul and reopened as The Slow Buffalo, the newest venture from the team behind Hale House and The Local. While there are some familiar touches if you've visited those restaurants, The Slow Buffalo definitely has its own personality, menu, and wing lineup (though a few shared sauces). Naturally, we had to see what the wings were all about.
We stopped in on a Monday night, but there's no wing night here, so you'll be paying full price. At $19 for 12 wings or $11 for 6 wings, they're certainly not the cheapest wings in town. The wings themselves were average in size, with a few slightly smaller ones mixed in. Overall, the chicken was flavorful throughout and enjoyable to eat. The texture, however, left us scratching our heads. Some wings had a nice crispy exterior while others were noticeably softer. More interesting was just how incredibly tender the chicken was. Almost too tender. Our food also arrived incredibly fast, and we noticed other tables ordering wings were getting theirs just as quickly. We're not sure exactly how they're preparing them, but the texture was definitely different than what you'd expect from a traditional fresh-fried wing.

It wasn't bad by any means. Just... different.
The sauce lineup is fairly compact, we managed to sample a good percentage of the sauces with just two people. The Slow Buffalo's sauce line up consists of: Asian Zing, Garlic Parmesan, Louisiana Dry Rub, Hot Honey, Hot Garlic, Buffalo, Buffalo Bonus, and Ruin Your Day(s). Tasting notes on the sauces we tried noted below:
Buffalo - Amber ordered the classic Buffalo, and it was excellent.
Very tangy, nicely vinegary, and carrying just enough heat to keep things interesting without overwhelming the palate. A really well-executed traditional buffalo.

Buffalo Plus -This is supposed to be their Buffalo with a dry rub added.
If that's what I received, the dry rub wasn't particularly noticeable. Even so, it delivered that same tangy buffalo profile with a pleasant level of heat, making it another enjoyable wing.
Spicy Garlic - This leaned sweeter than expected, with the garlic notes looming in the background while the spice stayed fairly restrained. Not particularly hot, but tasty.
Asian Zing - A familiar combination of sweet, savory, and lightly tangy Asian chili flavors. Nothing overly complicated, but a solid execution of a crowd-pleasing style.
The Verdict
The sauces were the highlight of the evening. Every one we tried was flavorful and well-balanced, and I'd happily order several of them again. The chicken, though, leaves me wanting another visit before making a final judgment. The unusual texture and extremely quick ticket times have me curious whether this was simply an off night or just their standard preparation. So for now, I cannot say The Slow Buffalo is a Milwaukee Wings Certified Wing Joint.
I enjoyed the meal, but if I were coming back tomorrow, the wings probably wouldn't be the first thing I'd order. That said, there's enough potential here that I'd absolutely give them another shot down the road. It's also great to see a new neighborhood restaurant breathing life into a corner that's seen several changes over the years. Hopefully The Slow Buffalo sticks around for a long time.
